Recipe: White Truffle Risotto

An elegant and comforting dish, perfect for a special occasion or a moment of pure indulgence.

Ingredients for 4 servings:

  • 400 gr. risotto rice

  • 1 small red onion

  • 30 gr butter

  • 50 gr Tesori del Matese white or black truffle

  • 20 gr grated Parmesan cheese

  • ½ glass of white wine

  • Tesori del Matese extra virgin olive oil to taste

  • Vegetable broth to taste

Preparation time: 20 minutes
Cooking time: 30 minutes
Total time: 50 minutes

Instructions:

  1. In a saucepan, sauté the chopped onion with a drizzle of olive oil. Add the rice and toast it for a couple of minutes, stirring well.

  2. Deglaze with the white wine and, once it has evaporated, gradually add the hot vegetable broth, stirring continuously.

  3. Meanwhile, prepare the truffle cream: in a small pot, melt 20 grams of sliced truffle in the butter over very low heat for about 5 minutes.

  4. Halfway through the rice cooking time, add the truffle cream.

  5. Once the rice is al dente (after about 15-18 total minutes), remove it from the heat and stir in the Parmesan and the remaining butter for a couple of minutes.

  6. Let the risotto rest for a few minutes, then plate and garnish with generous shavings of fresh Tesori del Matese truffle.
