Description

“Il Professore” is a Sicilian red wine produced by Tenute dello Jato in the Jato Valley between San Giuseppe Jato and Corleone, in western Sicily.

This Terre Siciliane IGP wine is made from 100% Syrah grapes, an international black grape variety that adapts particularly well to the Mediterranean climate and mineral soils of the region.

The grapes are harvested manually during the first week of October at optimal phenolic ripeness. After a light natural drying of the grapes, the wine undergoes alcoholic fermentation with the skins at controlled temperature. The maturation continues with aging in large oak barrels for approximately 10–12 months.

The wine displays a bright ruby red color. On the nose it reveals aromas of red fruits and sweet spices, while on the palate it is structured, balanced and persistent, with elegant tannins and a soft, harmonious finish.
